I had just extracted 50 pounds of beautiful golden summer honey. The frames were mostly capped with wax. I assumed the bees had finished their job. I bottled the honey right away without testing it.

Three weeks later, I walked into my pantry. I heard a quiet popping sound. Several of my honey jars had started to foam at the top. The lids were bulging. When I opened one, it smelled like cheap wine.

The honey had fermented. It was completely ruined.

I lost hundreds of dollars of premium honey that day. I learned a very hard lesson. You can never guess the moisture content of honey just by looking at it. You need a scientific tool. You need a honey refractometer.

What is a Honey Refractometer?

A refractometer is a simple optical instrument. It measures how much light bends when it passes through a liquid. This bending is called refraction.

When you mix sugar into water, the liquid becomes thicker. This thicker liquid bends light differently than pure water. A refractometer measures this exact angle of light.

It then translates that light angle into a number you can read on a scale.

For beekeepers, this tool tells you exactly how much water is trapped inside your honey. Standard fruit or wine refractometers will not work for honey. You must buy a specific honey refractometer designed to measure high sugar levels.

Why Honey Moisture is Extremely Important

Honey is mostly sugar. But it also contains water. It also contains microscopic yeast spores. These yeast spores come naturally from the nectar of flowers.

According to the National Honey Board, honey must have a moisture content of 18.6 percent or lower to be graded as safe for long term storage.

If your honey has a moisture level of 19 percent or higher, those tiny yeast spores wake up. They start to eat the sugar. They multiply rapidly. As they eat, they produce alcohol and carbon dioxide gas.

This process is called fermentation. It ruins the taste of the honey. The gas pressure can even cause glass honey jars to explode on the shelf.

Step One: How to Calibrate Your Refractometer

This is the most critical step. If your tool is not calibrated, your readings will be completely wrong. You should calibrate your refractometer at the start of every harvest season.

Most refractometers come with a small bottle of calibration fluid and a tiny reference block. However, many beekeepers lose this fluid over time.

  1. Open the clear plastic plate on the end of the refractometer.
  2. Put one single drop of extra virgin olive oil on the blue glass prism.
  3. Close the plastic plate gently. The oil will spread out into a thin circle.
  4. Hold the tool up to a bright window or a strong light bulb.
  5. Look through the eyepiece. Turn the focus ring until the numbers are sharp.
  6. Look for the line where the blue color on top meets the white color on the bottom.
  7. Use the tiny screwdriver provided with your tool. Turn the small calibration screw on top of the device.
  8. Adjust the screw until the blue and white line sits exactly at 71.5 on the Brix scale.

Your refractometer is now perfectly calibrated and ready to test honey. Wipe the olive oil off completely using a soft microfiber cloth.

Step Two: Preparing Your Honey Sample

You cannot just test honey while it is freezing cold or boiling hot. Temperature changes how light bends.

Most modern refractometers have ATC. This stands for Automatic Temperature Compensation. This means the tool will adjust itself slightly if the room is warm or cool.

However, ATC only works within a certain range. For the best accuracy, your honey and your refractometer should be sitting in a normal room temperature environment. This is usually around 68 to 72 degrees Fahrenheit.

If you bring cold frames of honey directly from the hive, let them sit inside your house for a few hours before testing.

Step Three: Testing the Honey

Now it is time to check your harvest. Make sure the blue glass prism is completely clean and dry.

  1. Take a small spoon or a clean wooden stick. Scoop up a tiny amount of honey.
  2. Place two drops of honey right in the center of the blue glass prism.
  3. Gently close the clear daylight plate over the honey.
  4. Press very lightly on the plate. You want the honey to spread completely across the glass.
  5. Look closely at the glass. There must be zero air bubbles trapped in the honey. Bubbles will ruin the light reflection and give you a false reading.
  6. Wait for exactly 30 seconds. This gives the honey time to adjust to the temperature of the glass prism.
  7. Hold the refractometer up to a very bright light source.
  8. Look through the eyepiece.

Step Four: Reading the Moisture Scale

When you look into the eyepiece, you will see a bright circle with numbers inside.

Most honey refractometers have three different columns of numbers. You will see a column for Baume, a column for Brix, and a column for Water.

You only need to look at the column labeled Water or Moisture.

Find the exact horizontal line where the dark blue shading turns into stark white light. Look at the number right next to that boundary line.

If the line crosses right between the 16 and the 17, your honey has a moisture content of 16.5 percent. This is perfect. You can bottle it safely.

If the line crosses at 19, your honey has too much water. You cannot bottle it yet.

Case Study: Saving a Commercial Harvest

Let us look at a real world example. Meet David. David runs a commercial apiary with 200 hives in rural Oregon.

In August of 2023, David had a massive honey harvest. The bees had filled the supers quickly during a heavy blackberry nectar flow. However, because the flow was so fast, the bees did not have time to cap all the honey cells with wax.

David knew that uncapped nectar usually has high moisture. He took his honey refractometer into the honey house. He tested honey from a fully capped frame. It read 17 percent. Perfect.

Then he tested the shiny liquid from an uncapped frame. It read 21 percent. This was raw nectar, not finished honey.

If David had extracted all those frames together, the wet nectar would have mixed with the dry honey. The entire 500 pound batch would have averaged around 19.5 percent moisture. The whole batch would have fermented in the buckets.

Because he tested first, David separated the wet frames. He extracted the dry frames immediately. He left the wet frames in a small, warm room with a commercial dehumidifier running. Three days later, he tested the wet frames again. The moisture had dropped to 17.5 percent. He safely extracted them.

David saved his entire crop and thousands of dollars simply by using a forty dollar tool correctly.

How to Test Honey Directly From the Hive

You do not have to wait until extraction day to use your refractometer. You can test your honey while it is still on the beehive. This is the best way to know if it is time to harvest.

Take your refractometer out to the apiary. Bring a clean toothpick.

Pull a frame of honey from the hive. Find a section of honeycomb that is not yet capped with wax. Poke your toothpick directly into one single cell of honey.

Smear that honey directly onto your refractometer prism. Close the plate and take a reading right there in the sunlight.

Always test the honey on the outer edges of the frame. Bees usually dry the honey in the center of the frame first. The outside corners are always the wettest part. If the corners are below 18.6 percent, the entire frame is ready to harvest.

Common Mistakes to Avoid

Many new beekeepers get frustrated when they cannot read the scale clearly. Here are the most common mistakes and how to fix them.

A Blurry Shadow Line

If the line between blue and white is fuzzy, your honey sample is not spread evenly. You either have air bubbles, or you did not put enough honey on the glass. Open the plate, clean the glass completely, and try again with a slightly larger drop of honey.

The Scale is Completely Dark

If you look inside and everything is dark blue, your honey is far too wet to read on the scale. Alternatively, you are not holding the device up to a strong enough light source. Always point the clear plate directly at a light bulb or the open sky.

A Scratched Prism

The blue glass prism is very sensitive. Never use paper towels or rough sponges to clean it. Wood fibers in paper towels will scratch the glass over time. Scratches scatter the light and ruin the accuracy. Always use a soft microfiber cloth and plain warm water to clean your device.

How to Fix High Moisture Honey

What do you do if your refractometer tells you your honey is at 20 percent moisture? You cannot sell it. But you do not have to throw it away either.

You must act like a bee. Bees dry nectar by fanning their wings to create airflow in a warm hive. You can replicate this in your home.

Place your open buckets of wet honey in a small, closed room. Set the room temperature to about 80 degrees Fahrenheit. Place a strong electric fan blowing gently over the top of the open buckets.

Most importantly, put a high capacity dehumidifier in the room. Turn the dehumidifier to its lowest humidity setting.

Check the honey every 24 hours with your refractometer. Be sure to stir the bucket well before testing. The driest honey will sink to the bottom. In two or three days, the dehumidifier will pull the extra water out of the honey.

Once your refractometer reads 18 percent or lower, you can put the lids on the buckets safely.
